This champagne wine from France has a pale yellow robe with topaz nuances. Hawthorn blends with acacia honey, beeswax and marzipan. When it is aerated, the wine shows some quince jelly meets raspberry jam and alternates with bergamot and warm brioche. On the palate it is invigorating, imposing and it teases the taste buds. The bead caresses and balances wild strawberry jam with ripe blood orange. This harmony is extended in a delicate minerality and a lovely bitterness in which hints of mandarin orange come through. Ideal as an aperitif. Goes perfectly with bouillon of crayfish and grapefruit, poached turbot with sauce hollandaise, scallop carpaccio, rack of lamb with foie gras, creamed Bresse fowl with truffles and mountain comté that’s at least 18 months old.

Champagne, France: Champagne Drappier

Drappier is a Champagne producer based in the Urville region of Champagne. The house, founded in 1808, produces both vintage and non-vintage cuvee as well as a prestige wine known as Grande Sendrée. Drappier is considered one of the finest boutique champagne producers in the world.

The cellars in which the wine is stored are among the oldest and most extensive in Europe, and were the only cellars that were not damaged during the two world wars or the fires that raced through the area in the 1950s.

Drappier is known for using significantly less sulfur in their wine than many other Champagne producers. One of their cuvées, the Brut Nature Non Dosé Sans Soufre, contains no added sulfur whatsoever.

This wine is a blend of Pinot Noir and Chardonnay from Champagne (France) and has a pale yellow robe with topaz nuances. Hawthorn blends with acacia honey, beeswax, and marzipan. When it is aerated, the wine expresses quince jelly, raspberry jam, and nuances of bergamot and warm brioche. On the palate, it is invigorating, imposing teasing the taste buds with flavors of wild strawberry jam with ripe blood orange, delicate minerality, and a lovely bitterness with hints of mandarin orange. Grande Sendrée from Champagne Drappier is the ideal aperitif. It also pairs perfectly with a bouillon of crayfish and grapefruit, poached turbot with sauce hollandaise, scallop carpaccio, rack of lamb with foie gras, creamed Bresse fowl with truffles, and Comté cheese that’s at least 18 months old. Available for deliveries within Metro Manila.
